Crispy Honey Brussels Sprouts

Preheat oven to 425°. Coat baking sheet with non-stick oil, or use baking stone.

In a large bowl, toss Brussels sprouts with 2 tablespoons of olive oil, salt and pepper to coat thoroughly.

Transfer the Brussels sprouts to baking sheet and roast until tender and crispy, about 20 minutes.

Place Brussels sprouts back in bowl. Add remaining 1 tablespoon olive oil, balsamic vinegar and honey and toss to coat evenly. Serve warm.

Makes 4 servings. Serving size 0.25 recipe.

Marinated Cucumber, Onion, and Tomato Salad

*1 cup diced cucumber

*1 cup diced fresh tomato

*1/2 cup olive oil

*1/2 cup apple cider vinegar

*1/4 cup diced red onion (or onion of choice)

*1 teaspoon cracked pepper

*1 teaspoon sea salt, or to taste

Directions

  1. Toss cucumber, tomato, olive oil, red wine vinegar, red onion, and white pepper together in a large bowl; season with salt. Refrigerate until slightly chilled, at least 15 minutes, up to 2 hours.
