*1 cup diced cucumber
*1 cup diced fresh tomato
*1/2 cup olive oil
*1/2 cup apple cider vinegar
*1/4 cup diced red onion (or onion of choice)
*1 teaspoon cracked pepper
*1 teaspoon sea salt, or to taste
Directions
- Toss cucumber, tomato, olive oil, red wine vinegar, red onion, and white pepper together in a large bowl; season with salt. Refrigerate until slightly chilled, at least 15 minutes, up to 2 hours.
